Guyanese Fried Balanjay

Ingredients

  • Egg plant 

  • Chicken

  • Tomato

  • Potato 

  • Onion

  • Garlic

  • Green onions

  • Scotch bonnet peppers or hot peppers

  • Potatoes

  • Salt 

  • Paprika

  • Chicken bouillon 

  • Garlic Herb seasoning

  • Crushed red peppers

Recipe

1. Chop garlic, onions, scotch bonnets, tomatoes and green onions. Cut the top and bottom off of your eggplant and cube your eggplant.

2. Soak your Eggplant in cold water and set aside.  

3. Peel potatoes and cut in fours 

4. Clean your chicken and cut into cubes

5. Season chicken with Salt, Garlic herb seasoning, crushed red peppers

6. Sauté Chicken, once the chicken is golden take it out of the pot and set aside 

7. Sauté onions for 3-5 mins and then add garlic 

8. Add in your eggplant and Season with Salt, Garlic herb seasoning, paprika, and chicken bouillon and let that cook down for 15-20 mins 

9. Add in your potatoes, tomatoes, peppers and chicken and cook on low heat until your potatoes are tender

10. Top with green onions
